Panhandle State Meat Lab Excels at Competition

The Oklahoma Panhandle State University Meat Lab competed at the Oklahoma Texas Meat Processors Convention and Cured Meats Competition this last weekend. They secured the Grand Champion 1st Placement in boneless ham. They also placed 3rd in the large diameter lunch meat with Canadian bacon, and 4th with their green chili and ghost pepper cheese snack sticks and hatch green chili and cheddar bratwursts.

Meat Lab Director, A.J. Ingo stated, “We learned a bunch, met new friends, and saw old friends and alumni. We were blessed in the Cured Meats Competition and were able to bring home some awesome hardware to hang proudly in the Meat Lab.”

A.J. was also appointed to the Oklahoma Texas Meat Processors Association Board of Directors. This Board of Directors work with lawmakers and bring awareness to the processing industry. The assist with different hands on learning sessions during the conventions and will prepare for the 2023 convention.

University partner Seaboard Foods donated the pork that was used in the products. Their high quality products undoubtedly help to produce great results.

Interim President, Dr. Ryan Blanton commented, “Congratulations to A.J. and the Meat Lab team for the exceptional showing at this competition. We cannot thank Seaboard Foods and David Watkins enough for always being a great partner to the University.”
