Job Summary:

Management of the Meat Lab to further the academic goals of the Animal Science Department. Oversee all production of consumer ready meat products and ensure that all packages meet customer specifications.


• Procurement of livestock and supplies
• Harvesting; processing; sanitation (HACCP)
• Responsible to help maintain HACCP program and all records associated with it.
• Comply with state and federal regulations
• Interacts with USDA on any NRs and any other concerns of the inspectors.
• Maintaining inventory and production control
• Sales of products, marketing and promotion of products and services
• Development of Meat Lab food products
• Management of inventory and sales software
• Management of accurate financial records
• Maintenance of equipment
• Responsible for personal safety and the safety of others
• Must always exercise due caution and practice safe work habits.
• Serve as a trainer for pre-operational inspection of equipment and for operational inspections of the facility.
• Ability to mentor and train student workers daily.
• Must be HACCP certified or obtain certification within 6 months of employment.
• Must have a strong work ethic and lead by example.
• Must be a professional, credible and respected representative of the institution internally and in the community
• Demonstrated willingness and ability to act ethically and socially responsible
• Must be able to lift more than 50-lb. objects; frequent bending, stooping, and walking.
• Can be exposed to a variety of weather conditions for periods of time.
• Ability to communicate in a courteous manner
• Other duties as assigned by Dean of Ag, Science & Nursing or designee.

• Working knowledge of harvesting and meat processing equipment
• Must be organized, accurate, thorough, and able to monitor work for quality.
• Must have excellent problem-solving abilities.
• Must be dependable, able to follow instructions, respond to management direction, and must be able to improve performance through management feedback.

EDUCATION, TRAINING AND EXPERIENCE: Bachelor’s degree preferred. Two years practical experience in meat processing preferred.
